Blackcurrant and Port Corn Beef

This will serve 12 but you can adjust your size of corn beef to your need , though it is fabulous cold and much easier to deal with than leftover turkey !!!

4kg piece of corn beef
1/2 cup cider vinegar
1/2 cup brown sugar
4 bay leaves
20 peppercorns
10 whole cloves
1 large jar of blackcurrant jam
1/2 cup port (optional)

Place corn beef in a large stock pot, cover with cold water .Add vinegar, brown sugar, cloves, peppercorns and bay leaf. Cook for 25minutes per 500gms.
Bring to boil then turn down heat to lowest setting.
Once cooked, line baking dish with baking paper and set oven at 200C, 180C fan forced.
Remove beef and discard liquid, trim any fat off the beef and place on baking dish.

Warm black currant jam and spread over the beef , Cook for 30 minutes ...
