The Apricot Tree ‘Garden to Gourmet’
Jenny Fowler and Meredith Freebairn are both farmers and health professionals who are friends who share a passion for growing, eating and sharing seasonal healthy, delicious food that is fun to cook.
We established our business ‘The Apricot Tree’ 5 years ago when we identified that many people were like us and unable to attend workshops in Perth because of work commitments.
We decided to invite ‘experts’ to the region to demonstrate their skills and share their knowledge with us.
This has included managing the soil so our gardens are sustainable, propagating plants, pruning fruit trees and roses, making pastry as only the French can do, pasta and pizza from an Italian expert and the list goes on.
We also like to share the experience and knowledge that we have gained over the years. This includes bread making, making the most of the summer harvest, using tomatoes, zucchinis, cucumbers, egg plants, stone fruits, making chutneys, pickles, jams relishes, pasta toppings, and then creating ways to incorporate them into the meals that we cook.
We encourage people to use locally grown produce, and this includes lamb and beef.
We also sell some produce that is our specialty, mainly at Christmas, such as Meredith’s famous Panforte, Christmas cakes, [including sour dough] and Christmas puddings.
We like to celebrate the end of the year with a theme for Christmas such as: Christmas nibbles and sweet treats, Christmas main course, including boning the turkey, tasting a variety of seasonings, and glazing the ham. A selection of what to have for Christmas Brunch ranged from pancakes to Huevos Rancheros to Gozleme, Chia pudding to an onion Marmalade Jalousie.
Christmas puddings with all the goodies were featured one year and last year we focused on ‘Let’s Party’ and really had some not only delicious but most impressive offerings to put on for a party to feed small or large numbers.
